Ajishan’s Chanhong Special Hot Chilli Sauce is one of the most commonly used chili pastes in Southeast Asian cuisine, both in actual cooking and as a condiment. It typically includes dried chilli, garlic, salt, lime juice and sugar with bird’s eye chili pepper (cili padi) to raise the level of heat (piquancy) of the sauce. It has an orange red hue, smooth consistency without seeds. It can be used as a dipping sauce, cooking glaze and marinade.
